1/2 package lady finger cookies / savoiardi
70ml silver rum
2tsp instant coffee
12oz water
226g mascarpone cream
2 eggs
60g sugar
1/4cup cocoa powder for dusting
Separate eggs into whites and yolks
Combine egg yolks with sugar and mascarpone cream.
Prepare instant coffee using coffee and water. Add rum!
Beat egg whites until firm
Combine egg whites with cream mixture and stir gently.
Layer cream followed by lady fingers dipped into the coffee (5 seconds) in a small bowl.
Repeat layers until bowl is full. End with a layer of cream, dust with cocoa.
