20oz of cubed diakon radish (3/4in cubes)
1 Tbsp sugar
1 Tbsp salt
4 green onions (greens sliced long, some whites sliced thin)
1 Tbsp gochugaru pepper flakes
1/2 tsp diced garlic
1/4 tsp diced ginger
1/2 tsp fish sauce
place radish, salt, and sugar in bowl for 15-30 minutes
reserve ~1 Tbsp radish water, drain the rest, rinse the radish
mix radish, radish water, green onions, pepper flakes, garlic, ginger, fish sauce and place in jar
refrigerate
